I Love Soup!

I love soup! I could eat it almost everyday. It is such a versatile and fulfilling way to cook a variety of ingredients. Soup is something that is easy enough to make for even the most inexperienced of cooks. With a few simple ingredients you can have a meal that not only satisfies your hunger, but is good for you and can even warm your soul. Whether you are sharing it with friends and family or enjoying it on your own, soup is great meal option anytime of the year!

Veggie Soup with Potatoes and Beef


  • 2 large carrots peeled and chopped
  • 2 stalks celery washed and chopped
  • 1 medium onion finely diced
  • 5-6 cloves garlic chopped
  • 1 package beef stew meat (optional)
  • 1 tsp olive oil
  • 1 tsp thyme
  • 1 tsp oregano
  • 2 bay leaves
  • Salt and pepper to taste
  • 5 large red potatoes peeled and chopped
  • 2-4 cups water (enough to cover everything in a stock pot)
  • 1 medium bunch kale (10-12 leaves) washed and chopped
  • 1 package frozen peas


  1. Place chopped carrots, onion, celery and garlic in a large stockpot with olive oil.
  2. Sauté on medium heat until onions are translucent, approximately 5-7 minutes.
  3. Add seasoning and cook for 3 minutes.
  4. If using the beef add to pot and cook on high heat for 10 minutes until browned, stirring often.
  5. Add potatoes and water.
  6. Bring to a boil and then reduce heat to medium allow to simmer until potatoes are tender, approximately 20 minutes.
  7. When potatoes are soft add chopped kale and frozen peas and simmer another 10-12 minutes.
  8. Serve warm with slices of crusty French bread and enjoy!
